NEW YORK STYLE CHEESECAKE

12 sachets (9oz) Cowhead Natural Oats Crackers,  crushed
1tbsp butter,  melted
1tbsp sugar
4 eggs
1 1/3cups sugar
2 tap vanilla
4pxs (32oz) Cowhead Cream Cheese, softened
16oz sour cream
1/2cup raisins (optional)

1. Mix crushed crackers,  butter and 1tbsp sugar.  Press in bottom of 8 inches baking pan.
2. Beat eggs until and lemon colored, about 5 minutes. Add 1/3cups sugar and vanilla. Set aside.
3. Beat cream cheese until smooth.  Blend in egg mixture and sour cream. Pour into pan. Sprinkle raisins over top.
4. Bake in 180oC oven 1hr. Turn oven off. Leave cake in the oven with door ajar for 1hr more.
5. Remove cake from oven. Cool 1hr at room temperature.  Chill.
